I have been lucky enough to find some cool ideas for my visiting teaching ladies lately, so I thought maybe I should start sharing whatever I do, no matter how easy, in case it helps someone else. So here goes!
Both of my VT ladies were not able to be at church yesterday, so I made very simple cards from my Print Shop program and wrote about what they missed. Attached them to lunch sacks with fresh peanut butter muffins. One of them has a daughter with chicken pox, so we made her a little "get well" baggie and Delaney made her a note to go with it.
Peanut Butter Chocolate Chip Muffins -- makes about 18 muffins
1 3/4 c. flour
1/2 c. packed brown sugar
1/2 t. baking powder
1/2 t. salt
2/3 c. peanut butter
3/4 c. milk
2 T. vegetable oil
2 eggs, beaten
1/2 c. chocolate chips (I might sneak in a little more than that, you can also sub PB chips)
1 T. sugar
Preheat oven to 375. Get your muffin tins ready with paper liners.
In a mixing bowl, combine flour, brown sugar, baking powder and salt. Cut in peanut butter until mixture resembles coarse crumbs. Add milk, oil, eggs and chocolate chips, stirring until just moistened.
Fill muffin cups. Sprinkle tops with sugar (I like to use the big sugar crystal sprinkles). Bake at 375 for 16-18 minutes.
**These are really good and even my kid who isn't wild about peanut butter loves them. Sometimes I serve them with dinner if we're trying something new that they're likely to be scared of, it helps dinner go a little happier. :-)
